Persian cooking is varied, with many distinct traditions depending on the regions of this large country (40x the area of Switzerland!).
Rice is the main ingredient but not just any rice. Basmati, a long-grain variety, takes a center stage. It lends itself to long stewing, which will create an irresistible crispy base. It will be accompanied with meat or fish, vegetables, saffron of course, large quantities of herbs, barberry...
Persian cuisine is not as hot as the Indian cuisine. It is always delicately scented.
You can follow the training I give at home or at yours in a small group.
I also sometimes officiate as a caterer at small events.
